My friends trying uni for the first time and experiencing the initial shock of its unique flavor and texture. One friend described it as a buttery ocean mushroom with earthy undertones. They both loved it despite the skepticism of the uni holdouts who saw their expressions.

The low-down on low calorie sushi
A diet consisting solely of sushi, as delicious as it sounds, might not fulfill all nutritional needs. First, it doesn't contain enough fresh raw vegetables to meet the recommended daily amount of 3-5 servings per day. At a cup per serving, the daikon garnishes, scallions and nori barely make one serving. Second, most sushi contains little or no fiber since white rice is processed and bleached. In reality, white rice is not much more than tasty filler. Some people buy brown rice sushi for added fiber and nutrition but, in my opinion, the nutty flavor of brown rice clashes with the light umami ocean flavors and the delicate fragrant ginger. When it comes to enjoying food, nutrition always takes a backseat to flavor and pleasure. My quest for healthy, low-calorie sushi stops at brown rice.

Ever wonder how sushi made it to the masses in grocery stores? The answer lies on the soy sauce packet that usually comes with each to-go tray of sushi that consumers happily buy for a quick and relatively cheap fix. Advanced Fresh Concepts a.k.a AFC Franchise Corporation is the largest supplier of fresh sushi to supermarkets and grocery stores, according to its website. From the looks of it, they provide their franchisees with all the ingredients and trained staff who prepare sushi on-the-spot and pack it in trays for individual consumption.
Elitist sushi fans who can afford to drop upwards of $50 for high quality sushi at decent restaurants may turn their noses up at supermarket sushi. To be fair, the quality of AFC sushi hardly compares to the quality at a sushi restaurant. For starters, the sushi rice tastes a bit sickly sweet and a quick look at the ingredients reveals why: high fructose corn syrup. It would be interesting to find out why AFC uses such an artificial ingredient and an educated guess has to with easy preservation since the sushi, once made and packaged, must sometimes last at least 12 hours. In contrast, people usually eat restaurant sushi within 15 minutes after it leaves the chef's hands so naturally it will be much fresher. Same goes for the raw fish and other ingredients in restaurant sushi.
Still, fast-food sushi fits the bill for desperate sushi fans who lack time and money to indulge in a restaurant sushi meal. Sometimes all one needs is a close approximation of the heavenly flavors of soy, wasabi, fish, nori and sushi rice to recharge and refuel.
Uni (Sea Urchin Roe)
Only the most adventurous sushi lovers eat uni. Its strong flavor and unusual appearance arouses a visceral suspicion that repels timid palates. When I tried uni for the first time as a child, it tasted like a disgusting creamy band aid. But palates change and I tried it again in college. I still tasted the band aid but the flavor had morphed into something more complex and utterly delicious. Still, I do not recommend it to sushi newbies like my boyfriend. He recently acquired the taste for sushi only a few years ago. Uni tasted like roadside ditch sewage to him and he eyes it with disgust when I order it. Take the poll below and share your thoughts.
My adventure at Sushi Dokku’s Oyster Happy Hour began with a fortuitous unsolicited email from the restaurant. Normally, emails like this irritate me but discovering that my favorite sushi restaurant offered $1 oysters brightened an otherwise boring day at work. I forwarded the email to a good friend and within minutes we made a date to sample oysters and catch up.
Raw oysters are sublime and provide a taste of heaven for those who enjoy them.
